When people ask me what luxury dining in a chalet actually looks like, I always smile because I know the reality is so much better than whatever they are imagining. It is not stuffy or formal. It is not white tablecloths and awkward silence. It is warmth, laughter, incredible food, and that wonderful feeling of being looked after completely while you are on holiday. Let me walk you through what a typical luxury evening with me looks like, from canapes to the last bite of dessert.
I arrive at your chalet in the afternoon while you are still on the mountain or relaxing after your day. By the time you have showered and gathered in the living area, the kitchen is already humming and something wonderful is in the oven. The evening starts with canapes and your choice of drinks. I love making these because they set the tone for the whole meal. It might be smoked salmon blinis with creme fraiche and dill, crispy prawn toasts with a sweet chilli dip, or perhaps some beautifully seasoned goats cheese and caramelised onion tartlets. These are the things that make people stop mid-conversation and say, "Oh, that is amazing."
For groups of six or more on the luxury service, I bring a host along with me. They are there to look after you for the evening, pouring wines, clearing plates, making sure your glasses are never empty, and generally allowing you to simply sit back and enjoy. It transforms the whole experience from a lovely meal into something that genuinely feels like a special occasion. After canapes, you move to the table and the real magic begins. Every course is plated individually, just as you would expect in a fine dining restaurant, but with the comfort and intimacy of your own chalet. The menus I create are always tailored to each group, but to give you an idea of the kind of food I love to cook for luxury evenings, here are a few favourites.
A starter might be my lobster bisque risotto, rich and silky with a beautiful depth of flavour, or perhaps a twice-baked cheese souffle that never fails to impress. For mains, I often cook confit duck leg with a cherry and red wine jus, the kind of dish that fills the whole chalet with the most incredible aroma while it is in the oven. My slow-braised lamb shanks with port and rosemary are another favourite, falling off the bone and served with buttery dauphinoise potatoes. For something lighter, pan-seared sea bass with a herb crust and seasonal vegetables is always a winner.
Dessert is where I really enjoy being creative. A dark chocolate fondant with a salted caramel centre, a classic tarte tatin with vanilla cream, or individual lemon possets with homemade shortbread. Chamonix has some genuinely wonderful restaurants and I am always happy to recommend them for your night off. But there are some things that a private luxury dining experience in your chalet offers that even the best restaurant simply cannot match.
First, there is the convenience. After a big day skiing, the idea of getting dressed up and heading back out into the cold is not always appealing. In your chalet, you can be in your favourite jumper with a glass of wine in hand and still have a meal that rivals anything in town. Second, the menu is entirely yours. You are not choosing from what the restaurant decided to serve that night. Every dish has been planned around your preferences, your dietary needs, and what you love to eat. Third, the wine. You buy it at shop prices and drink what you want, when you want. No restaurant markup, no feeling rushed to order another bottle.
And then there is the atmosphere. Your own music, your own pace, your own people. Nobody at the next table. No clock ticking towards a second sitting. Just a beautiful meal in a beautiful setting with the people you chose to share it with.
Many of my luxury dining bookings are for special occasions. Birthdays, anniversaries, milestone celebrations, or simply a group of friends who want one evening during the week to be truly memorable.
